If you’ve got aspirations to be a Head or Executive Chef and manage a kitchen, this is the course for you.

For entry to this course you’ll need:

  • Professional Cookery at SCQF Level 6 or above OR SVQ Level 3 in a relevant area
  • Core skills of Communication and Numeracy at Level 6
  • An interview with us

If you don’t have formal qualifications, but have appropriate industry experience or other training, skills, then we’ll also consider you for a place, so please call us for a chat.

What's Involved

To be successful on this course, you’ll need to have a solid knowledge of cookery and a real passion for food. In line with real life hospitality practice, there will be times where you’ll need to come into college in the evening, not just during the day.

The course is a mix of advanced practical cookery skills, management/supervisory skills and theory. As you’d expect from a management level course, there’s a lot of report writing, and financial control and analysis.

  • You’ll now be perfecting your craft skills, so every dish you make will be absolutely top notch in terms of quality, taste and presentation.
  • You’ll spend a day a week working in the production kitchen of one of our live restaurants - either Inver at the Ayr Campus, or Salt and Barrel at Kilmarnock, where you’ll prepare food for customers.
  • You’ll learn elements of hospitality management, such as finance and law, and you’ll learn how to manage a kitchen and train staff.
  • You’ll need to write a lot of reports and develop clear communication skills - both written and verbal.
  • You’ll also have the opportunity to take part in national competitions such as the Student Team Challenge and the prestigious Toque d’Or.
