Professional Cookery students celebrate success

Professional Cookery students celebrated their success after competing against student chefs from across the country at the finals of the prestigious Country Range Student Chef Challenge in London.

Professional Cookery students, Charlene Walker from Kilwinning, James Young from Kilmarnock, and Iona Duncan from Irvine competed against ten college teams from across the UK.

To congratulate the student chef finalists, Simon Cathcart from Dunns Foods presented the students with a canvas of their dishes at a presentation at Salt and Barrel restaurant in the Kilmarnock Campus recently.

The judges were incredibly impressed with the level of skills, professionalism and creativity on show from all the ten teams, with Ayrshire College gaining a certificate of merit.

Hospitality Lecturer and student mentor, Annemarie Farr said “the students were committed throughout and worked extremely hard. I’m super proud for them to have reached the final.”

This year’s theme ‘Around the World in Three Spices’ meant teams had to use a different fresh or ground spice in each of their courses.

The Ayrshire College team menu consisted of:

Starter – Smoked haddock and spinach cannelloni with a mulligatawny veloute, onion bhaji, mint yoghurt, mango chutney and bread crisp.

Main – Pistachio crumbed pork fillet, potato encased harissa spiced shoulder, celeriac fondant, buttered baby kale, charred pickled pineapple and pomegranate syrup.

Dessert – Chocolate and chilli panna cotta, Jamaican style ginger cake, lime crème fraiche ice cream, white chocolate and raspberry cookie crumb with a dark rum gel.

Country Range Challenge Manager, Emma Holden said “The team demonstrated an incredibly high level of skill, passion and creativity throughout each stage of the competition and we were proud to provide a platform for the students to showcase their talent.

“I was incredibly impressed by the extraordinary standards, teamwork and professionalism shown by the student chefs and they were fantastic ambassadors for Ayrshire College.”
