Professional Cookery students inspired by industry

Students at Ayr Campus were joined by award-winning Chocolatier, Shona Sutherland from Taystful for a masterclass recently.

As part of their Professional Cookery (Patisserie and Confectionery) course, the students got the chance to learn techniques working with chocolate, resulting in a chocolate show piece at the end of the day.

Sharing her experience as a Patisserie Chef and Chocolatier, Shona said “We covered lots of techniques including textured plinth, flower petals, cocoa butter colouring, metallic, airbrushing, branches, piping butterflies, casting eggs and also curls with chocolate putty. We had a lot to get through, but all the students showed great enthusiasm and produced brilliant show pieces.”

Ayrshire College Hospitality Lecturer, Livia Alexander said “the students couldn’t believe how much can be done with chocolate. It was amazing to see their sense of achievement after only a day’s workshop”.

Patisserie and Confectionary student, Margaret Martin said “I’ve learnt so much today. It’s been really interesting and I’ve enjoyed being able to be creative and have my own input to the design. I love the course and would recommend it to anyone!”
