Overview

Have you been inspired by the 'Great British Bake Off'? Do you want to learn how to bake croissants, cupcakes, Christmas cakes, ciabatta, doughnuts, vacherins, pies, scones, sponges.... (the list goes on)! This practical course covers a wide variety of baking techniques from bread making to cake decorating and making chocolates. You will spend most of your time in our state-of-the-art training kitchen, being taught by a bakery industry expert. As baking is a science, there is theory associated to what you do in practical classes.

Entry requirements

For this course you’ll need:

  • a genuine interest in baking
  • a bakery/cookery qualification at SCQF Level 4
  • core skills in communication, ICT, and numeracy at SCQF Level 4
  • the ability to stand in a hot kitchen for considerable periods of time

If you don’t have formal qualifications, but have relevant experience or training, we will happily consider your application.

Course units include:

  • Craft Baking 
  • Cake Decoration - sugar paste, chocolate processes, gateaux finishing
  • Dough Products
  • Pastry - short, sweet, choux, puff, hot water
  • Flour Confectionary Processes
  • Food Hygiene

Careers and Further Study

On completing this course you may:

  • Progress to a Level 6 course in bakery/patisserie.
  • Start your career in the baking industry.
  • Start your own business.

Skills

You will learn skills in all aspects of baking and become skilled in using  baking equipment and tools. 

You’ll also gain essential, transferable skills such as communication, numeracy, ICT, teamwork and problem solving – skills that will serve you well in all aspects of life, education and work.
